Chocolate Porter Chipotle Sauce

Hello Spring. I have missed you.

Last time I checked in I was whining over the “in-my-mind” unseasonably cold temperatures in May. IN MAY! How DARE you Mother Nature!? And even tho Jeff continued to remind me that “That is what SPRING in the Midwest is hon!” I refused to believe. Or listen. Which is to be expected. And next year at this time when I sit in shorts and a tank top eating ice cream when it is 60° out bitching that I am cold we will repeat this conversation much to Jeff’s chagrin. Because I love spring and everything that IS spring and I can not wait for it to make its much anticipated appearance.

Finally it has been coming around more often, albeit rather shyly. All that matters is that the garden is in the ground and we can go back to brewing beer outside rather then in the teeny kitchen. Which gets messy and cramped and some of us get crabby…

Another thing this awesome weather has done is given me a severe sweet tooth. Which is rather unlike me. My favorite snack is usually anything salty with a beer back. (Oh STOP IT! You, you and YOU there with your silly grins and dirty minds…) And because we decided to make this blog all about food AND beer and therefore all recipes must include beer in some way shape or form we have been getting creative.

This week getting creative equals pouring porter laced chocolate sauce all over anything you can imagine. (Again yous there with the goofy looks on your faces!)

Chocolate Porter Chipotle Syrup

Chocolate Porter Chipotle Sauce

1 Bottle of Porter
1 2/3 cup white sugar
3/4 cup unsweetened cocoa
1  t chipotle powder
1 teaspoon vanilla
1/4 t cinnamon
pinch salt

Pour your porter into a heavy sauce pan and bring to a simmer. Add the sugar and bring to a low boil for about 5-10 minutes, taking care not to burn.

Add the remainder of the ingredients and stir to blend well. Simmer for 5-10 minutes. Cool.

Pour into jar and refrigerate till needed, if it makes it that far.

It should be noted that this is NOT a fudge sauce. It is NOT thick. It is more like a Hershey’s Chocolate Syrup, only better.
